ReplyDeleteWhen I was living in Germany back in 89-91 I had a tiny little kitchenette and had to learn to cook with only the crudest of tools. My full range consisted of:

1 small saucepan
1 pot for boiling water
1 good carving knife
1 wooden spoon
1 spatula
1 soup spoon
My meals were largely dictated by the vicissitudes of what was available at the local market. Since my fridge was the size of a toaster over, I couldn't keep much more in it than a bottle of wine, a couple of beers and a half-dozen eggs and maybe a chunk of cheese.
That was one of the best educations in cooking technique I ever had.

ReplyDeleteMore than 30,000 Pakistani soldiers launched a major ground offensive in the main Al-Qaeda and Taliban stronghold along the Afghan border early this morning (Sat).
The offensive in South Waziristan follows months of airstrikes intended to soften up militant defences that have also forced tens of thousands of civilians to flee. The push is due to focus on ridding the region of the Pakistani Taliban, a network opposed to the U.S.-backed Pakistani government.
The full-scale operation also comes after two weeks of militant attacks that have killed more than 175 people across Pakistan and ramped up the pressure on the army to take on the insurgents.
It is the army’s fourth attempt since 2001 to dislodge Taliban fighters from the lawless tribal region of South Waziristan, and an intelligence official said the latest effort could take up to two months. The three previous attempts ended in negotiated truces that left the Taliban in control.

The three-year-old black camel was grazing in a desert pasture about 150 miles west of Ahsa when it fell into a large hole dug to store crude oil.
Now the owner, Abdullah al-Saiari, is suing the oil giant Saudi Aramco for £160,000 in compensation for his prized camel.
Mr Saiari told the Saudi Gazette: "She was part of the Camel Beauty Contest."

In order to facilitate that I did two things - I learned to do all the prep work FIRST - what the French call mise in place, I believe.
The other thing I did was when it was time to replace my old stove, I got a new one with a warming drawer. That has simplified my cooking life enormously.

ReplyDeleteThis is about Obama's trip to Copenhagen re: climate change treaty. Lord Monckton gave a speech in which he warns about this being a back door/trojan horse scheme to impose global gov't and about Obama's temptation to cede US sovreignty.

I read that treaty. And what it says is this, that a world government is going to be created. The word “government” actually appears as the first of three purposes of the new entity. The second purpose is the transfer of wealth from the countries of the West to third world countries, in satisfication of what is called, coyly, “climate debt” – because we’ve been burning CO2 and they haven’t. We’ve been screwing up the climate and they haven’t. And the third purpose of this new entity, this government, is enforcement.

ReplyDeleteDoing prep first is essential. We have a fairly small galley kitchen. At first I despised it, but I'm really getting to enjoy it (though I wish I had more counter space -- who doesn't?) If I'm planning a "big" meal, I usually like to start about four hours in advance getting the kitchen straightened up, doing prep, and then putting on soup and starting the items that can either be precooked or left to go for a while. Once that's all done, I clean the kitchen (again) to get everything set for the final prep.
Getting a new stove helped a good deal; we also have a convection oven that's great for keeping things warm. My timing issues generally derive from small people or large people who don't know how to tell time and get home 2 hours late.

I'm not very patient with people who I've spent hours in the kitche for and they are disrespectful.
I have been known to dump an entire spread when someone took a 20 minute phone call as we were about to sit down.

The trick to boat cooking is to make sure that you invite only people who get seriously sea sick and then serve lots of hard liquor before dinner, along with terrifying appetizers -- squid en gelee, for example, or individual soufles with calves brains. Everyone will be so sick that it doesn't matter what you serve -- you can rave about it later and they'll have to agree because they won't want to admit that they can't hold their liquor and get sea sick.

ReplyDeleteScrambled eggs, according to Julia (from Mastering French Cooking, p. 125
ReplyDelete7 eggs plus 2 egg yoks
4 tsp water or milk
2 TB softened butter (for pan)
1 1/2 to 2 Tbss softened butter or whipping cream (for last step)
"Beat eggs in the bowl with seasonings in liquid for 20 to 30 seconds just to blend yolks and whites. Smear the bottom and sides of the pan with the butter. Pour in the eggs and set over moderately low heat. Stir slowly and continually, reaching all over the bottom of the pan. Nothing will seem to happen for 2 to 3 minutes as the eggs gradually heat. Suddenly they will begin to thicken into a custard. Stir rapidly, moving pan on and off heat, until the eggs have almost thickened to the consistency you wish. Then remove from heat, as they will continue to thicken slightly. Just as soon as they are of the right consistency, stir in the enrichment butter or cream, which will stop the cooking. Season to taste, turn out onto the platter, decorate with parsley, and serve.
